Christmas Day
Christmas morning... Levi woke up about 7:30 AM and Matt gave him his stocking. I was so thankful that Matt had thought to look for silly socks and he stuffed them full of fruit and candy (and Hot Wheels for Levi).

Christmas Eve
Magically, gifts started appearing! It was so fun to watch Levi, as he studied all the labels and gave a shriek of delight when he found one with his name. "L-E-V-I, that's mine, right dada?"

Middle Eastern Eggplant Salad
We had a new recipe tonight. I decided to save myself some time and purchased a jar of roasted red peppers which worked out really well. This is great with cheese and crackers.
For the link and photos - Middle Eastern Eggplant Salad.
Reminiscent of baba ghanoush, this salad can be served alongside roasted or grilled meats or as a dip with crackers or flatbread.
Yield: 4 servings (serving size: 1/2 cup)
Ingredients
- 2 medium red bell peppers
- 1 medium tomato, peeled and seeded
- 3 tablespoons no-salt-added tomato paste
- 2 tablespoons water
- 1/2 teaspoon salt, divided
- Dash of ground red pepper
- 3 garlic cloves, thinly sliced
- 1/4 cup olive oil
- 1 pound eggplant, cut into (1-inch) cubes
- 1/4 teaspoon freshly ground black pepper
Preparation
1. Preheat broiler.
2. Cut bell peppers in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 12 minutes or until blackened. Place in a zip-top plastic bag; seal. Let stand 10 minutes. Peel and chop.
3. Place tomato in a blender; process until smooth. Combine tomato puree, tomato paste, 2 tablespoons water, 1/4 teaspoon salt, ground red pepper, and garlic in a blender; process until smooth.
4. Heat oil in a saucepan over medium heat. Add eggplant; cook 30 minutes or until tender, stirring frequently. Stir in bell pepper and tomato mixture. Cook 5 minutes. Stir in remaining 1/4 teaspoon salt and black pepper.

Celebration lunch
My mom is finally done with her online law school classes, and Matt's dad had completed his quarter of networking at WWCC so we decided to make pizza to celebrate their accomplishments. It was a pleasant distraction.

Buddy's bath
My old dog Buddy hasn't been doing too well lately. He has had diarrhea for about two weeks and recently stopped eating his dog food. He was only eating about half of what he normally eats, and for him that is not normal. So I made a vet appointment for him tomorrow. Then I realized it has been a long time since he had a bath. All my dogs are house dogs, they really only go outside to use the bathroom so they don't have much of a chance to really get too dirty. Ellie helped me bathe him and I think Buddy appreciated the extra attention. Ellie held his collar for me.
